One of our kids most favorite desserts during the holidays is Chocolate Pecan Pie. This desert is usually the first to go. The pie is simply delicious and a fantastic “twist” on the traditional Pecan Pie recipe. The best part? It’s very easy to make!
- 1 standard (9-inch) unbaked pie shell, available from your grocery store. You can also use a chocolate pie shell as well.
- 1/2 cup dark corn syrup
- 3 tablespoons melted butter
- 1.5 – 2 cups of chopped pecans
- 3 eggs, beaten
- 3 ounces semisweet chocolate, chopped. Semisweet chips can also be used
- 1 cup sugar
Preheat your oven to 375 degrees.
Cover the bottom of your regular or chocolate pie crust with the chopped pecans. In a medium sized mixing bowl, whisk together the melted butter and beaten eggs. Add the chocolate, corn syrup, and sugar. Mix all ingredients until they are combined. Pour the mixture into the pie shell and over top of the chopped pecans. Place the pie and on a heavy-duty cookie sheet to handle any overspill that sometimes occurs.
Bake for 10 minutes at 375 degrees. After 10 minutes, lower the oven temperature to 350 degrees and continue to bake for an additional 25 – 30 minutes or until pie mixture is set. Watch the crust closely to avoid burning it. Remove the chocolate pecan pie from oven and place on a wire rack to cool and fully set.
Serve with vanilla ice cream or chocolate ice cream for an added touch. Simply delicious.
